Weekend Cooking - Snicker Pie

This is a low fat, low sugar version of snicker pie for those times when you or your guests want a dessert that won't sabotage any health goals.

It is a frozen treat without a crust that is quick to make and delicious to eat.

Snicker Pie

1 qt. sugar free, fat-free vanilla ice cream (1/2 of a half-gallon)
1 8 oz fat-free cool whip
Place ice cream and Cool whip in a large mixing bowl to soften completlely.

Add:
1 (4oz) package sugar-free chocolate fudge instant pudding mix
1/4 cup chunky peanut butter
1/4/ cup Grape Nuts Cereal

Combine well with mixer and pour into 9" pie pan.  Freeze.  Cut into 8 servings and drizzle with sugar-free chocolate syrup.

You can subsitute soy nut butter for peanut butter.  Also can use light or regular versions of ice cream, cool whip and pudding.

I did not have any grape nuts in the house so I used low fat granola without raisins and it turned out just as good.  I also added a little bit more ice cream to use up a half gallon so my pie is a little lighter color than normal.

Weekend Cooking is hosted by Beth Fish Reads every weekend. It is open to anyone who has any kind of food-related post to share: Book (novel, nonfiction) reviews, cookbook reviews, movie reviews, recipes, random thoughts, gadgets, fabulous quotations, photographs.

Thanks for sharing this one! This looks so easy and great for the summer. I'm definitely trying it when the weather turns warmer. I'll likely use regular ice cream from Penn State University's famous creamery.

I love the look and the sound of this recipe. It looks so elegant that it's hard to believe that it's low fat/sugar. I'm going to give it a try. Thanks for sharing.
