Weekend Cooking

This simple dip is fabulous and great for your superbowl party!  You can use a variety of dippers.
I will be munching on this as I read while everyone one else is watching the game.

Sweet Onion Dip

2 medium onions (vidalia are best)
2 cups real mayonnaise - (do not use low fat or no fat)
1 8oz pre-shredded swiss cheese
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika

Chop onions.  Mix cheese and mayo then add to onions.  Place in oven-proof baking dish.  Sprinkle with pepper and paprika.  Bake at 375 for 25 minutes.

Dipper ideas:
red, yellow, orange or green peppers (cut into wedges)
bagel chips
tortilla scoops
rye triscuits

I want some of this right now! :) No Super Bowl festivities here though--our Sundays are temporarily consumed with Sam's wind ensemble rehearsal. If only the Seahawks would get their act together...

This sounds like a great dip for a party or book club. We usually have appetizers at book club and this one would be great. I'm saving the recipe!
